The QC Staff is responsible for ensuring that the broiler slaughterhouse partner meets the required quality, food safety, and yield standards. They will monitor processes, inspect products, and ensure that production follows best practices for hygiene, efficiency, and quality.

Key Responsibilities:

Quality Control & Compliance:

Ensure slaughtering, evisceration, chilling, and packaging follow company standards and regulatory guidelines

Conduct daily inspections of carcass quality, cleanliness, and handling procedures

Check for bruises, broken bones, and other defects in processed chickens

Monitor and enforce hygiene and sanitation standards in all areas of the slaughterhouse

Ensure compliance with food safety standards (HACCP, GMP, ISO 22000, etc.)

Yield Monitoring & Optimization:

Track live bird weight vs. processed carcass weight to ensure optimal yield

Monitor and document shrinkage losses, identifying areas for improvement

Work with slaughterhouse staff to optimize cutting and portioning to maximize usable meat output.

Process Audits & Reporting:

Conduct regular audits on slaughterhouse procedures, documenting deviations and corrective actions

Report daily and weekly QC findings to management, highlighting critical issues

Maintain accurate records of quality checks, defects, and corrective actions taken

Supplier & Partner Coordination:

Collaborate with slaughterhouse partners to implement quality improvement measures

Ensure corrective actions are taken when non-conformities are found

Provide training and guidance to slaughterhouse workers on quality and yield optimization.

Food Safety & Hygiene Oversight:

Verify that workers follow hygiene and personal protective equipment (PPE) requirements

Ensure cleaning and sanitation schedules are strictly followed

Identify potential contamination risks and take preventive actions

Requirements

Education & Experience:

Diploma or Bachelor’s degree in Food Technology, Animal & Agriculture Science, or a related field

Has min. 1 year of experience as Quality Control in slaughterhouse

Skills & Competencies:

Strong understanding of poultry slaughtering processes, quality control, and food safety standards

Knowledge of HACCP, GMP, ISO 22000, or local food safety regulations

Ability to analyze yield performance and suggest process improvements

Detail-oriented with strong observation and reporting skills

Strong communication and teamwork skills to work with external partners and internal teams

Proficiency in Microsoft Excel, Word, and reporting tools

Other Requirements:

Willing to travel and be on-site at the slaughterhouse as needed

Able to work in a cold and high-hygiene environment

Strong commitment to ensuring quality, safety, and operational efficiency
